Sprouts are delicious as well as nutritious. They are easy to grow at home. Follow the directions to make your own, or simply buy them from your health food store and add them to your salads.
Ingredients for Sprout Salad
- 1½ sprouts (radish, red clover, sunflower, buckwheat, mung bean) (680 g)
- 3 carrots, fine chopped (340 g)
- ½ bunch basil (60 g)
- ½ bunch dill (60 g)
- ½ bunch cilantro (60 g)
- Dash of cayenne pepper
- Cucumber-Citrus Vinaigrette
Ingredients for Cucumber-Citrus Vinaigrette
- 1 cucumber (225 g)
- 1 avocado (170 g)
- 1 small red onion (85 g)
- 1 cup orange juice (240 ml)
- 9 sun-dried tomatoes, soaked for 3-4 hours in water (60 g)
- 2 tablespoons bragg’s liquid amino (tamari)(30 ml)
How to Make Sprout Salad with Cucumber-Citrus Vinaigrette
- Wash all the sprouts, carrots, and fresh herbs
- Chop the herbs and toss with the sprouts and cayenne pepper
- Toss with the dressing and serve the salad chilled or at room temperature
- To make the dressing, place the cucumber, avocado, red onion, orange juice, sun dried tomatoes, and brag’s liquid amino in a blender and process until creamy
